Developed by Canadian Gary Johnston through the University of Guelph, Ont., and now recognized worldwide, the Yukon Gold potato was created to deliver the intrinsic flavour of the yellow-fleshed potato, commonly found in Europe and South America.
HEALTH APPEAL- There is no fat in a potato.
- With the skin, potatoes are high in vitamin C, potassium and fibre.
- The average potato has approximately 50 g of carbohydrates.
- A low-carb potato has recently hit the market. It has fewer carbs than a regular potato.
STORAGE Do not refrigerate your potatoes, as the starches will turn to sugar. Instead, store in a cool, dark place with good air circulation – and keep them away from your onions. Onions release a chemical that causes potatoes to sprout.
HEALTH NOTE To get the full nutritional impact of the potato (extra vitamins and fibre), try leaving the skins on for any of these recipes.
